Welcome Chris Chafe!

Executive Chef at our Newfoundland resort inn and spa

We’re so excited to welcome and introduce our new Executive Chef, Chris Chafe. We first met Chris at the Eat the Hill culinary event in Clarenville this past winter, as we were delighted by his unique, delicious creations. We know that our guests will love his newly created Spring Menu, which we’ll be featuring every Thursday through Sunday throughout May.

Born and raised in St. John’s, NL, Chris Chafe earned the role of executive chef at age 22 as a result of hard work and passion. Chris began his culinary career working part-time as a dishwasher while attending university, and from there, he decided to pursue cooking full-time.

Completely self-taught, Chris honed his skills through apprentice work with experienced chefs. When he is not spending time with his wife and two-year-old son, Chris absorbs any information he can through television, recipe books, the Internet and other local chefs. Competitor on Food Networks show Top Chef Canada and winner of the silver medal at Gold Plates St. John’s 2011, Chris continues to challenge himself by participating in local charity and community events.

Enjoy Bay Roberts This Summer!

Beach in NewfoundlnadWe love giving our guests recommendations for fun things to do while they spend time at our cottages. Thankfully, here on the Baccalieu Trail, that’s pretty easy! Especially with towns like Bay Roberts just a short trip away, there’s always something fun going on to explore.

Coming up soon in May, Bay Roberts will be hosting their popular ‘Songs, Stages and Seafood Festival,’ a great opportunity to enjoy Newfoundland culture and cuisine. They’ve got a car show coming up, too, and more. Please see all their offerings here, keeping in mind that coupled with some of our Spring Specials, a fun, family weekend away might be in your near future!

Whiteway Spring Hare Less Than a Week Away!

Whiteway Spring HareAs you can tell from these in-process masterpieces from Whiteway artists Clifford George and Lisa Day, the Whiteway Spring Hare will soon be upon us! This Friday’s Dinner Theatre is already sold out, but 32 artists are lined up to display their work on Sunday’s afternoon of storytelling and poetry-reading. To learn more, see here, or, if you’d like to volunteer Sunday, send us an email and we’ll put you in touch with the organizers.

Thanks to Lisa for the great shots. Stay tuned as we’ll have more to share – so much to do out here on the Baccalieu!Painting for the whiteway spring hare at our Newfoundland cottage rentals

Shag Rock’s Many Faces

Shag Rock on the Atlantic Ocean at our Newfoundland cottage rentalsWe never get tired of this view off our back deck (off our cottages’ back decks, too). Shag Rock is constant, yet the powerful Atlantic, and Newfoundland’s stunning sunsets, means the view is always changing. There’s definitely a metaphor for life there. Such a blessing to have lots to contemplate, a stellar view, good coffee and good company on a Sunday morning. God bless.

Happy Saturday

Greetings from our Newfoundland resort inn and spaHappy Saturday, everyone! We hope you have a great weekend – and remember, we have lots of great Spring Specials lined up, so your next weekend could be your best one yet this year, spent with us. And if you’re wondering whether you should indulge this weekend, Murphy’s posing by Shag Rock to remind you, to just smile and say ‘Shag It!’

More Renos

Rennovations at our Newfoundland Resort Inn and SpaWe never would have guessed how much could go on ‘behind-the-scenes’ at a resort like The Doctor’s House until we were running one ourselves! We’ve already blogged about our renovations to the ‘Big Barn,’ building a fun and big new space for the upcoming wedding season. Less obviously, since we’re still managing to ‘wow’ with our hot breakfasts and gourmet weekend meals, we’ve also been re-doing our kitchen, too. The original was functional but not big enough, so a re-vamp was necessary, and our modifications are coming along nicely. We have some fun things planned for our restaurant this summer, so please stay tuned!

Meeting Our Neighbours on the Baccalieu Trail

Tourism Operators in Newfoundland and LabradorYesterday Jerry got to take part in a special day arranged by Legendary Coasts to profit and not-for-profit tourism operators on the Baccalieu Trail. We all got to know each other a little better and we all presented ourselves and our offerings.

It was a great idea and the session was well attended,  with a great presentation by Tourism, Culture and Recreation of Newfoundland and Labrador about digital marketing,  and a tour of the Cupids Legacy Centre – a fantastic facility built in commemoration of Canada’s first English speaking community in Canada. Lots of learning and lots of great new friends – that’s a great day!Cupids Legacy Centre in Newfoundland and Labrador Cupids Legacy centre in Newfoundland

Good Morning!

Breakfast at our Newfoundland resort inn and spaWe know that our guests at The Doctor’s House love waking up to a warm breakfast – because they tell us so all the time! Who wouldn’t love waking up to Chef Anna Dohey’s blueberry pancakes? This photo was recently captured by Colette Phillips of Artfully Yours, our official wedding photographers.

Also, here’s Karl Wells’ great write-up of last week’s great Savour Food and Wine event, with a favourable nod to The Doctor’s House and our Chef Chris Chafe.

Remember that we also offer gourmet meals at The Doctor’s House each weekend – and you can always see our planned menus here. Please join us there soon!

Tuesdays with Murphy: Shag It!

Golden retrievers playing at our Newfoundland cottage rentalsIt’s getting nicer, but we’re still waiting for that hot summer weather to kick in. And of course. the Atlantic Ocean is cold any time of the year up here in Newfoundland. So you might think dogs would eschew playing fetch in the chilly water these days, and you’d be right – some dogs might. But Friday and I have warm coats and warm blood, descended as we are from the Newfoundland and the archaic St. John’s dogs. So when Jerry throws us some sticks, there’s only one response – Shag It, and jump in!Dogs chasing sticks in the Atlantic Ocean at our ocean front cottage rentals in Newfoundland

Happy Easter from Ocean Delight!

Newfoundland artist at our Newfoundland cottage rentalsHappy Easter from all of our crew! We hope you’re enjoying a wonderful weekend with your family and friends and getting lots of rest and relaxation, t0o. And we’re excited to be hosting our first Easter brunch at The Doctor’s House. Thanks to Allison George for this beautiful photo of her dad, consummate Newfoundlander Clifford George. We’re lucky to call both friends. Now, get back to your chocolate-gorging!
